Meatless Monday – Sort Of

I’ve started my version of Meatless Monday with my family. In other words, we don’t eat the meat of walking creatures. We will gobble up fish, but mostly the meal will consist of veggies. I was able to sneak this day into the week, and hubs didn’t notice. He wasn’t aware until last night. But he didn’t flinch. My meat and potatoes man didn’t take a second look at the fact that we weren’t having, well, meat and potatoes.

With consistently empty plates every Monday, full bellies, healthy babies and smiling faces, we will venture on to new recipes and greener vegetables … and red vegetables and yellow vegetables and orange vegetables and purple vegetables. We pretty much love them all.

{AND now I’m hoping I didn’t jinx anything. Quickly crossing fingers and toes for my currently non-fickle itty bitty.}

Meatless Mondays :: Veggie Lover

A few thoughts that I keep in mind for Meatless Monday ::

// This was an easy choice I made for my family.

// It is only one day a week … to start.

// Mads discovered a few new veggie favorites like spaghetti squash.

// Roasting vs raw vs steaming – decide what you like best.

// Never a shortage of recipes so I try to pick out something new or “scary looking” and see what we can come up with for the next meal.

// Kale rocks. Butternut squash is amazing. Together is heaven.

// I understand why veggies may have received a bad rap when we were younger – lack of trying.

// Mads helps me cook. She is 1.5 years old but even at this age, she can definitely begin to learn about all the fun colors and flavors out there and the safe ways to prepare it.

// Leftovers = carry that goodness into the next day.

// The satisfied feeling after this meal does not leave us feeling guilty. Energy hangs around for a bit.

// It’s easier to carry these gorgeous flavors into the other days of the week.

Such a fan. SUCH. A. FAN.

{And just between you and me, I never thought I would crave cauliflower and broccoli like I do now! Lawdy!}

    I have always wanted to add a “Meatless Monday” to my week.
    After reading this, and you reminding me, I think I am going to incorporate it! 🙂

      Definitely give it a whirl 🙂 I was pleasantly surprised at just how easy it was. Planning my meals for next week as we speak!
