Cinnamon and Sugar Scones

With a Saturday on the calendar sans plans and a very much pregnant mama walking around, we decided to stay home and do a little tea party with our favorite four year old. We bought a few special things from a favorite local bakery and made {really good} tea sandwiches. I decided we needed just one more thing: scones. How can we have tea without some sort of scone? I realize how silly I sound, especially at 38 weeks pregnant. No need for the reminder …  my dearest husband and family members constantly remind me of this 😉

But trust me, even at 38 weeks pregnant and with {sometimes} low energy levels, I thought this recipe was super quick and easy. The dough/cooking time was very forgiving {I may have forgotten about them for a few extra minutes in the oven}, and the finished product was extremely satisfying. I won’t keep you in suspense. Let’s get to the recipe.

Scone Ingredients

2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter (I also found that this will work well with margarine)
1 egg, separated
3 tablespoons honey
1/3 cup buttermilk (Make your own: 1/3 cup milk mixed with 1/2 teaspoon of vinegar)
1 tablespoon granulated sugar
1 teaspoon ground cinnamon

Glaze Ingredients

1 cup powdered sugar
3 teaspoons water (You can absolutely use milk if preferred)
1/2 teaspoon vanilla

  1. Preheat oven to 400 degrees. Combine flour, baking powder, baking soda and salt. Cut in butter until mixture is crumbly.
  2. Separate the egg white and yolk. Set the egg white aside.
  3. In a separate bowl, mix egg yolk, honey and buttermilk. Add to the dry ingredients and stir until just combined.
  4. Form dough into a ball on a lightly floured surface. Dough will be sticky! That’s okay – you’re doing it right.
  5. Pat the dough into a circle about half an inch in thickness. Cut into preferred shape. I used a heart cookie cutter, but I know most people prefer cut it like a pizza and create slices. This will create 8 pieces, whether it be slices or hearts or another shape of your choosing.
  6. Transfer to a parchment-covered or greased baking sheet.
  7. Whisk the egg white until froth forms and brush over the tops of scones. Mix granulated sugar and cinnamon together and sprinkle over egg-white-topped scones.
  8. Bake at 400 degrees for about 10 to 13 minutes.
  9. Pull scones from oven and place on cooling rack.
  10. Mix together powdered sugar, water and vanilla until glaze forms. Drizzle over scones.
  11. Eat and enjoy! xo
